I work diligently with my publishers, editors, and proofreaders to ensure every recipe, chart, and paragraph in all of my books are as accurate and clear as possible before going to print. However, to err is human, and despite our best efforts, a few small errors may occasionally slip through.

The following corrections have been kindly brought to my attention and are being updated in the next print run. I am deeply grateful to the readers who take the time to share these discoveries — your keen eye helps make each edition even better.

The Canning Diva Presents® Meals in a Jar book
First Edition, First Printing (2024)

  • Page 89, Recipe for Gigantes Plaki (Greek Butter Beans)
    • Error: Direction Step 3 “Add 1 cup of beans to each quart jar or 1/2 cup of beans to each pint jar.”
    • Correction: “Add 2 cups of beans to each quart jar or 1 cup of beans to each pint jar.”
    • Note: The dried lima beans were presoaked, requiring less liquid during processing, therefore the ratio in each jar should be larger to adequately yield the specified 7 quarts or 14 pints.
  • Page 127, Recipe for Canning Shrimp
    • Error: Header process time states “90 or 75 minutes”.
    • Correction: “55 or 45 minutes” like stated in Step 6 of the instructions.
    • Note: While the recipe itself is correct, the Prep Time Header for “process time” was incorrect.
  • Page 135, Recipe for Green Chili Verde with Pork
    • Error: In the recipe description, it states “combined with roasted poblano peppers”
    • Correction: It should have stated “combined with roasted tomatillos”
    • Note: The recipe is correct; tomatillos are properly listed as an ingredient and are used in Step 1 of the Directions. If you would like to incorporate poblano peppers in this recipe, you may substitute them for the jalapenos or use a mixture of the two; so long as they do not exceed the 1-2 cups in the ingredient list. You may also roast the peppers with the tomatillos if you prefer to do so.

  • Page 86, Recipe for Lentil Sausage Casserole
    • Error: First ingredient “2 cups dried green lentils”
    • Correction: “1 cup dried green lentils”
  • Page 103, Recipe for Beef Broth and Page 104, Recipe for Chicken Broth
    • Error: Last ingredient listed “4 gallons cold water (64 cups)”
    • Correction: “Enough water to cover the ingredients in the stockpot, approx. 30 cups”
    • Note: Broth simmers shorter than stock so it requires less water, however be sure to use enough to yield the 7 quarts called for in the recipe and to account for evaporation.
  • Charts on Pages 134-135, 138-139, 142-143, and 148-149
    • Error: Columns titled “Yield in Pints” and “Yield in Quarts” are inverted.
    • Correction: “Yield in Quarts” should list 7 in each row and “Yield in Pints” should list 14 in each row.
  • Page 166, Recipe for White Chicken Chili
    • Error: Fourth ingredient states “24 boneless, skinless chicken thighs, cut in 1-inch pieces (2 cups)
    • Correction: “4 boneless, skinless chicken thighs, cut in 1-inch pieces (2 cups)”
  • Page 180, Recipe for Fall Pot Roast
    • Error: The ClearJel® measurement is missing in the list of ingredients
    • Correction: “1/3 cup ClearJel®”
