Key Takeaways

  • Build once, enjoy anytime. These Grab-and-Go Freeze-Dried Soup Mixes are a convenient way to keep quick, shelf-stable meals on hand for busy days, camping, travel, or emergency preparedness.
  • Customize every jar. Swap vegetables, seasonings, or bouillon flavors using what you've already freeze-dried to create soup combinations your family will enjoy.
  • Leave room for rehydration. When assembling the jars, leave 1½ to 2 inches of headspace so there's enough room for boiling water and for the freeze-dried ingredients to fully expand.
  • Start with a room-temperature jar. Always allow the jar to come to room temperature before adding boiling water to help prevent thermal shock that could crack the glass.
  • Adjust the broth to your liking. If the soup is thicker than you prefer after rehydrating, simply stir in additional boiling water until it reaches your desired consistency.

Why I Created These Soup Mixes

I originally started making these soup jars while preparing for Prepper Camp. Once the event starts, there isn't much time to sit down and eat. Between setting up my booth, answering questions, signing books, teaching classes, and visiting with attendees, I needed something I could prepare in just a few minutes.

I'll simply heat water, pour it into one of these jars, tighten the lid, and let the vegetables rehydrate while I continue working. By the time I have a few quiet minutes, it's ready. The best part - I am not replacing a meal, but rather providing myself a quick pick-me-up until I have more time to properly cook and sit down. For instance, before the sun rises, I will start each day with my stick-to-the-ribs Corned Beef Hash.

Additionally, these soup mixes are intentionally vegetable-forward. They're designed to provide quick energy from wholesome vegetables and carbohydrates until I can enjoy a protein-rich meal. The beauty of these jars is that you can customize them with your favorite freeze-dried vegetables, seasonings, and choose to create a protein-packed soup by adding freeze dried meat.

Ingredient Variations

One of the best things about these Grab-and-Go Freeze-Dried Soup Mixes is how easy they are to customize. Think of this recipe as a starting point rather than a strict formula. My favorite combination includes a beef bouillon cube, freshly ground black pepper, a pinch of Celtic salt, and layers of freeze-dried potato cubes, onions, carrots, corn, broccoli, and cauliflower. It creates a hearty vegetable soup that's ready in minutes with nothing more than boiling water.

Feel free to swap vegetables based on what you've freeze-dried and enjoy eating. Green beans, peas, celery, mushrooms, bell peppers, cabbage, spinach, zucchini, or even tomatoes all make excellent additions. You can also change the flavor profile by using chicken or vegetable bouillon instead of beef, or season with Italian herbs, garlic powder, onion powder, parsley, thyme, rosemary, or your favorite salt-free seasoning blend.

As you build each jar, resist the temptation to fill it to the very top. Leave 1½ to 2 inches of headspace so there's plenty of room for the boiling water to circulate and for the freeze-dried vegetables to fully rehydrate. That extra space helps ensure every spoonful is tender and flavorful instead of leaving some ingredients only partially reconstituted.

Freeze Dried Soup Mix Recipe

These convenient freeze-dried soup jars make individual servings that are ready in minutes. Layer your favorite freeze-dried vegetables with seasonings, vacuum seal the jars for long-term storage, then simply add boiling water whenever you're ready for a warm bowl of soup. They're perfect for camping, busy workdays, emergency preparedness, travel, or keeping in the pantry for those days when time is short. Yield: 6 Pint Jars

Ingredients

For each pint jar:

  • 1 beef bouillon cube
  • Freshly ground black pepper, to taste
  • Pinch of Celtic salt
  • Freeze-dried potato cubes
  • Freeze-dried onions
  • Freeze-dried carrots
  • Freeze-dried corn
  • Freeze-dried broccoli
  • Freeze-dried cauliflower

Instructions

  1. Place one beef bouillon cube in the bottom of each clean, dry pint Mason jar. Add freshly ground black pepper and a pinch of Celtic salt.
  2. Layer the freeze-dried vegetables into each jar beginning with the potato cubes, followed by the onions, carrots, corn, broccoli, and cauliflower. Gently tap the jar on the countertop as needed to help the ingredients settle naturally.
  3. Continue filling each jar, leaving 1½ to 2 inches of headspace. This extra space is important because the vegetables will expand as they rehydrate and the boiling water needs room to circulate throughout the jar.
  4. Wipe the rim of each jar with a dry microfiber cloth to ensure it is clean and free of debris. Use a Mason jar vacuum sealer according to the manufacturer's instructions to remove the air and create an airtight seal using a traditional canning lid. For transport, secure each jar with a screw band after sealing.
  5. Label and date each jar, then store in a cool, dark, dry location until ready to use.

To Prepare

Before adding boiling water, make sure the jar is at room temperature. Pouring boiling water into a cold glass jar can cause thermal shock, increasing the risk of the jar cracking or breaking.

Once the jar has reached room temperature, remove the lid and carefully pour boiling water over the freeze-dried ingredients, leaving approximately ¼ inch of headspace. Stir well to dissolve the bouillon and distribute the seasonings throughout the vegetables. Loosely replace the lid and allow the soup to stand for 15 to 20 minutes, stirring once or twice as the vegetables rehydrate.

If you prefer a brothier soup, simply stir in a little additional boiling water after the vegetables have fully reconstituted until the soup reaches your desired consistency. Taste and adjust the seasonings if needed before eating.
